Mash the banana with a fork, then mix all the ingredients together and distribute evenly in a pie plate and bake for 10 minutes at 180°C.
Soak the pitted dates in water for 3 hours and then mix them into a puree (you can add a little water for easier mixing).
Whip the whipping cream, add the peanut butter, mixed dates, whey and xanthan gum, and mix everything together well. Don't worry if the pastry cream thickens a lot during mixing, that's what we want.
Cover evenly the oatmeal base with the pastry cream.
Whip the whipping cream, add one tablespoon of sugar-free sugar and stir.
Spread over the first layer of pastry cream.
Put in the fridge for at least 3h or better, overnight.
Decorate as desired!
